Chicken Soup

We’ve reached the stage of winter when everyone was/is/soon will be sick. Yuck. Last week I came home from work feeling all stuffed up and generally blah. I need chicken soup and I need it now.  And under no circumstances did I want to enter the grocery store. Here’s the cold season version of “clean out your fridge soup” with lots of turmeric and ginger for their magical healing qualities. (OK maybe not magic, but virus-fighting all the same.) Use the recipe below as a guide, sub in whatever veggies you have or like. Let the soup work it’s relaxing magic.

Simple, warming soup to clean out your fridge and ease your cold.
  • 1 tablespoon olive oil
  • 1 diced onion
  • 1 chopped carrot
  • 2 chopped celery
  • 1 tablespoon ginger
  • 2 cloves garlic
  • ½ chopped fennel
  • 5 sliced mushrooms
  • 5 cups chicken broth
  • 1 cup shredded chicken
  • 1 tablespoon turmeric
  • 1 tablespoon soy sauce or coconut aminos
  • A few handfuls of spinach
  1. Heat olive oil in dutch oven or soup pot over medium heat.
  2. Add onion, carrot, celery, and ginger and saute until onion is translucent, about 5 minutes.
  3. Add garlic, fennel, and mushrooms and saute for a a few more minutes.
  4. Add broth, chicken, turmeric, and soy sauce. Bring to a boil and simmer uncovered for at least 15 minutes.
  5. Add spinach a handful at a time and simmer until cooked. (Or! you can just put a couple handfuls of spinach in each bowl and pour soup over it.)
  6. Serve immediately or allow to cool and freeze for later.
